Since before Optimism had a name, Gay has wanted to create a beer specifically for weddings — universally optimistic celebrations — and call that beer “I Do”. When we were test batching this beer with Hallertau Blanc, a hop that gives of aromas characteristic of white wines, and in the Brut IPA style, which creates a very dry finish like Brut wine, it seemed like the perfect match! Like most of our beer names this one has a double meaning. It is the well-known refrain uttered by both partners in their wedding vows, but also an independent commitment to take action. Ordering an “I Do” is celebration of the possible, and we think it is the perfect beer for every celebration.
